Chhodang corn soup came next, showcasing Korea's famously sweet corn variety. The soup was velvety and intensely sweet, capturing the pure essence of corn in every spoonful.


Abalone was served atop radish with smoked razor clams. The abalone's signature chew combined with smoky depth, while the radish cut through any richness.


The tilefish course featured crispy tempura over rice, finished tableside with hot broth poured over. The mild fish, crunchy batter, and savory broth together created an irresistible rice bowl I polished off in moments.


Perilla oil octopus noodles with Hanwoo broth brought together chewy octopus, creamy uni, and springy noodles in a nutty perilla-scented broth. Wild chamnamul herbs added aromatic complexity. The noodles slipped down effortlessly.


The main event arrived: grilled Hanwoo. Our individual tabletop grill was set with thick-cut chuck flap tail, crispy potato wedges, and vegetables for grilling. A traditional Korean spread accompanied it—steaming white rice, miyeok-guk (seaweed soup) rich with beef, and refined banchan. It felt like a birthday feast.


I grilled the vegetables first, then cooked the Korean beef to our preferred doneness. Watching and hearing the meat sizzle to a gorgeous sear was half the pleasure. A bite of properly grilled Hanwoo chuck flap with just salt and a dab of wasabi literally melts in your mouth. The tenderness, the juice, the nutty savoriness—perfection.


I alternated between wrapping beef in grilled vegetables, laying it over rice, and sipping the hearty seaweed soup. Even when full, I kept reaching for more. That's the magic of truly excellent Korean beef.
