Every mouthful awakened the palate: the silky texture of the raw beef, the subtle truffle aroma wafting from the lobster, all wonderfully balanced.


One dish I still dream about is the caviar-topped amberjack. Fresh fish crowned with generous spoonfuls of kumquat sauce delivered a flavour profile that was both refreshing and luxurious. The caviar's delicate pop combined with the fish's tender texture created a moment of pure bliss.

The chilled sweet corn soup arrived perfectly cold, with whole corn kernels providing delightful textural contrast. Its gentle sweetness and nutty undertones served as an ideal palate refresher while building anticipation for what would come next.

Next came my absolute favourite of the evening: perilla oil baby octopus Hanwoo noodles. Delicate capellini dressed in citrusy yuzu sauce, finished with sea urchin that added incredible depth and umami richness. I loved it so much that I attempted to recreate it at home. Even looking at the photos now makes my mouth water.
