The key was eating them in that exact order. The tortilla was a summer substitution, and the combination of fresh beef tartare with the nutty tortilla was outstanding.

The yellowtail amberjack dish was a new summer menu item—springtime features sea bream with sea urchin, they explained. Dressed with chive oil and green citrus sauce, topped with baby bok choy and water dropwort, it was fragrant and had a wonderful chewy texture.

Braised abalone and radish arrived in a champagne butter sauce base, garnished with stone laver, brown seaweed, cheese purée, and white wood ear mushroom. The nuttiness of the stone laver elevated the abalone's natural sweetness. The braised radish was tender, slightly sweet, and perfectly balanced to accompany the abalone.

Charcoal-grilled Hanwoo tteokgalbi (Korean beef patty) was presented skewered over a clay brazier. We were guided to pair it with celery-scented purée, asparagus, and morel mushrooms. I'm typically not a mushroom person, but the morels here were exceptional. The patties, gently cooked over charcoal, were tender and bursting with juices.


Jeju red tilefish was grilled with the scales on for a crispy texture. It came with melon pickle, grilled broccolini stems, and a doenjang (soybean paste) bisque sauce. The staff mentioned the sauce was refillable, so we enjoyed it generously.

Hanwoo perilla oil noodles featured thin capellini topped with perilla leaves, cirsium setidens, and seasoned soybean sprout greens, garnished with Hanwoo shank and octopus. Whole perilla seeds added a fun popping sensation, and the clean broth had a sweet-and-sour note that made the dish hearty yet refreshing.

The final main course, charcoal-grilled Hanwoo, was served on a personal brazier for us to grill ourselves. The 2++ grade sirloin cap arrived pre-seared, allowing us to finish it to our preferred doneness. I typically prefer well-done, and even fully cooked, this 1++ grade beef remained incredibly tender and juicy. It came with a traditional Korean rice set: seaweed soup, white rice, and three banchan (freshly-pickled mustard greens, salted squid, and pickled royal fern). The salted squid on top of the beef brought out an amazing umami depth.


Dessert was yuzu sorbet and cream cheese ice cream. As part of the anniversary package, they also prepared a personalized message plate with candles, which made the moment feel truly special. Polaroid photo service is also available, so if you're visiting for a special occasion, I recommend requesting it in advance.
